We have these little gems ready for planting and you can harvest them next autumn! They grow very tall like sunflowers and once you plant one sunchoke you may find you will have them coming up the following year although you thought you harvested them all! They are very high in minerals and another way to get iron into your diet! Your muscles and nerves will be happy with the extra vitamin B1 and Potassium. They have a very low glycemic index GI so are good for people who have a difficulty with sugar levels.

I like to grate them into my salad raw, or chop them up into a stew. Sometimes I just eat them like a raw carrot with dip as they taste sweet.
